This is a dairy free, nutritious, and delicious cheese, that is easy, fast, and guilt free, not to mention it doesn’t harm any animals or our planet. It can be a spread on morning toast or sandwiches or a dip for veggies, fruits, and chips. It can even be used as cream cheese.
Make sure you use unsalted and raw almonds that have been soaked for at least 24 hours and use a high power blender. Regular blenders will not work. You can also add your favorite fresh herbs and make it even more incredible. I’ve given you two versions so you can pick and choose or make both. The first one includes nutritional yeast, which is a great source of B-12, among others. But they are both full of powerful nutrition and flavor.

Ingredients
1 cup raw unsalted whole almonds; soaked and drained
½ cup water; preferably filtered
2 tablespoon nutritional yeast
2 tablespoon lemon juice; organic preferred
1 tablespoon organic olive oil
½ teaspoon garlic powder
½ teaspoon sea or kosher salt
Finely chopped fresh organic herbs of your choice (optional)
Drizzle of maple syrup (optional)
2nd version
Ingredients
2 cups of unsalted, raw almonds; soaked and drained
¼ cup organic olive oil
2 garlic cloves; finely chopped
1 teaspoon of sea or kosher salt
Juice of 1 medium size lemon; preferably organic
Finely chopped fresh organic herbs of your choice (optional)
Directions
Soak the almonds in water for at least 24 hours and drain.
Place all the ingredients into a high power blender and mix.
Add your favorite chopped herbs (optional)
Serve immediately or store in the refrigerator for up to at least 5 days.
