Don’t be afraid of tofu. It’s gotten a bad wrap from people who know nothing about it. Actually, tofu has been around for ages, and people who consume it regularly has been linked to good health and longevity. It’s has many vitamins, minerals, calcium, iron, magnesium, high in protein, no cholesterol, and with virtually no calories, just to mention a few benefits. Its mild and neutral flavor can be turned into just about anything, including this sour cream.
This is an easy recipe you can use in place of regular sour cream which is high in calories, saturated fat, and contains dairy, preservatives and additives, and so much more. But you can enjoy this tofu sour cream without guilt or worry.
1 package of organic silken tofu
1 tablespoon lemon juice; organic preferred
1 tablespoon red wine vinegar
Parsley, chives and other herbs, chopped (optional)
Combine all ingredients into a blender and mix until it’s creamy.
If you’d like you can add herbs, cayenne, cumin, etc. The possibilities are endless.
Place it in a container (preferably a glass jar) and chill for an hour before serving. Enjoy!
