This incredibly easy, delicious and nutritious sauce can be used in many ways.
It can be a dipping sauce for veggies, satays, spring or summer rolls, and fruits. (I love spreading them on apple slices). It can also be used as salad dressing, pasta sauce, and a sandwich spread in place of mayo, among others. I bet you can come up with some new ways.
Peanut butter is actually very healthy, but many commercial brands add additives, salt, and preservatives.Yuk! Peanut butter should have only one ingredient – peanuts. That’s all. Make sure you read the back of jar under ingredients to make sure it doesn’t have anything else, including salt.
Make Your Own PB
You can also make your own peanut butter. Just buy some peanuts (unsalted, dry or roasted) and place them into a food processor and run it for about 5 minutes and voila! Peanut butter.
Optional: you can add a bit of honey and/or salt, but you really don’t need it.
Makes 2 cups
1 teaspoon ginger, finely minced
1 clove of garlic, finely minced
1/2 cup organic no salt, creamy peanut butter or any organic nut butter, such as almond butter, etc.
2 tablespoon organic soy sauce or tamari
1 tablespoon fresh lime juice
1/3 cup of water
1 teaspoon organic light brown sugar or organic maple syrup.
Place all the ingredients in a blender and blend on medium.
If it’s too thick, add more water. If too thin, add more peanut butter. Blend until smooth. Transfer to a small container and cover, and chill in the refrigerator.
Bring to room temperature before using. It can be stored up to 3 days.
