No Stove, Easy, Delicious, Healthy, and Cheap!
Since I don’t have a stove in my garage, I use my rice cooker for just about everything, including of course, making rice. It’s quite magical and one of poor woman’s best friend. I throw just about anything in there and push the cook button and I have a no recipe, easy, healthy, delicious and a cheap meal, and the bonus is that I don’t have a greasy stove to clean up or lots of dishes. Yea!
For the omelet, I use my favorite veggies and herbs, but I usually throw in whatever is in the fridge, especially my senior veggies that’s ready to exit, and I avoid waste. Often, I add beans and peas for protein as well.
The rice cooker omelet always comes out perfectly cooked, beautiful, hearty, and fluffy, and I have turned it into an omelet sandwich or a wrap. Sometimes, I just have it with a simple salad, a bowl or brown rice, toast, or even baked chips. I also like to put ketchup and/or hot sauce or chili flakes for extra flavor and spiciness. Eggs and ketchup or a match made in heaven. You can also add some spices and turn it into something totally exotic. I usually make a big batch and have it throughout the week. It keeps well in the fridge for at least a week.
This rice cooker omelet can be breakfast, lunch, dinner, or even a snack. And I’ve eaten it in every way possible because it’s so easy, yummy, and affordable. Give it a try.

Ingredients
2-4 Organic eggs
½ small onion, chopped (for sweetness).
Organic veggies of your choice (senior veggies recommended).
Bell peppers, cherry tomatoes, baby spinach, kale, broccoli, etc., all works really well.
Organic herbs such as parsley, basil, etc., chopped or tear by hands.
Sea or kosher salt
Freshly ground pepper
Optional
Organic canned beans, such a garbanzo or black beans, rinsed well.
Organic frozen peas; well rinsed (don’t need to thaw).
Spices such as cumin, curry, garam marsala, regular or smoked paprika, chili powder, etc.
Chili flakes or hot sauce of your choice.
Directions:
Place all ingredient into the rice cooker and stir well. The more you stir, the fluffier the omelet will be. Make sure you use a wooden of plastic utensil so you don’t scratch the bottom of rice cooker.
Add a dash of salt and pepper and spices, if using.
Push the cook button. When it’s done, enjoy with some toast, turn it into a sandwich, or eat it with a bowl of rice. Anything goes. Enjoy!
