These bites are yummy and easy to whip up. You can also put them in muffin tins and turn them into muffins for breakfast or snacks. Enjoy with some high quality raw honey or homemade or store bought organic jam and take a culinary trip to Ireland.




2 cups organic AP flour
2 teaspoons organic sugar or coconut sugar
¾ cups of organic almond milk
¾ teaspoon baking soda
¾ teaspoon kosher or sea salt
2 tablespoon organic extra virgin olive oil or organic unsalted butter


½ cup raisins, dried cranberries, or chocolate chips.


Preheat oven to 375 degrees

Mix the dry ingredients in a bowl by hand or using a stand mixer. Add the butter and mix for a minute or two, and then add raisins, cranberries, or chocolate chips, if desired.

Roll the dough out on a floured surface and cut out 1 inch thick pieces using a cookie cutter or a cup. You can also drop them in a well greased muffin tins.
Bake for 15-20 minutes. Enjoy!
