HEALTHY, FAST, DELICIOUS BANANA CHOCOLATE BREAD!

So Good….

This recipe needs just one bowl and ingredients you already have and some chocolate chips (if you have some) and voila! You have healthy and yummy breakfast, snack, dessert, and anything in between. The whole house will smell like baked bananas and chocolates, and you can enjoy it on its own or with your favorite coffee, tea, or hot chocolate, and make everybody happy, including yourself.
Try making a couple of loaves and give it away to anyone you care about.

Tip: Bananas without any blemishes are not ripe. So, unless you’re planning to keep it on the counter for awhile, pick ones with some brown spots. And don’t toss the ones that look like it’s rotten. Even when it’s brown inside, it’s perfectly edible and at its sweetest.
You can make this by hand or use a stand mixer as well.

 

Makes 1 Loaf

 

Ingredients

4 medium very ripe organic bananas, mashed.
2 large organic eggs.
1/4 cup organic coconut oil,
melted or organic extra virgin olive oil plus extra for greasing the pan.
1/4 cup raw honey or organic maple syrup.
2 teaspoon vanilla extract.

1 1/2 cups organic whole wheat flour, or organic AP flour, or gluten free flour.
1 teaspoon baking soda.
1 teaspoon ground cinnamon; preferably organic.
1/2 teaspoon of sea or kosher salt.
1 cup good quality semi sweet chocolate chips, dark or white or a mix (optional).
Chopped walnuts or raisins (optional).

 

Directions

Preheat the oven to 350 degrees.
Grease a 9×5 inch bread pan with olive oil.
In a mixing bowl, combine the bananas, oil, honey, eggs, and vanilla and stir.
Add flour, baking soda, cinnamon, and salt and mix well. Don’t over mix.
Fold in chocolate chips and/or walnuts and raisins, if using.
Pour the batter into the greased pan and bake for about 50 – 55 minutes or until a toothpick comes out clean. Cool for a few minutes and serve warm and enjoy!
