This is the world’s healthiest, easiest and creamiest pasta that takes only 20 minutes. You can use any kind of pasta, long or short, but I recommend organic whole wheat or buckwheat pasta, or spiralized zucchini noodles for even more nutritional power.

12 ounces organic pasta or zucchini noodles.
2 ripe avocados, halved.
1/2 cup fresh organic basil leaves or
organic baby spinach.
2 cloves of garlic, minced.
2 tablespoons freshly squeezed lemon
Sea or kosher salt and freshly ground black
pepper to taste.
1/3 cup of organic extra virgin olive oil.



1 cup of organic cherry tomatoes, halved or whole
Vegan or organic cheese
Crushed red peppers



In a large pot, cook the pasta according to package directions.
For the zucchini noodles, cook no more than 30 seconds to a minute at the most in boiling water.


In the meanwhile, combine avocados, basil or spinach, garlic, lemon juice in a  blender or food processor. Add salt and pepper. With the motor on medium, add the olive oil slowly until it’s fully emulsified. Season to taste with salt and pepper.


Drain pasta or noodles well.


In a large bowl, place the pasta/zucchini noodles and mix with the avocado sauce.


Serve with cherry tomatoes, cheese, and/or red peppers (all optional) and a sprig of basil and enjoy!
